Our hot peppers have had a great season and are now ripe red from their initial green. We grow an heirloom called fish which is a Serrano hot pepper, a Padron pepper, and Jalapeno which are now red. I usually make a fermented sriracha style sauce that will last all year long in the refrigerator.
